How sharp is your knife

Generally carbon is easier to sharpen and keep sharp, but as we all know it goes dull and has a tendency to rust. Of course stainless looks much better and holds its edge well, when, however the edge goes off it can be very time consuming to get the original super sharpness back. Patients and a good selection of oil stones is my favourite method to achieve the best results.

 

I use a simple sharpness test that gives good results.

 

1. Use an A4 sheet of 100gsm white paper and mark out a line in 1cm divisions.

 

2. Hold the paper 1cm from the edge of the line, take your knife and draw towards you using the lightest of pressure, when you have drawn the blade through it should reach at least 3cms.
